Grillo is a native Sicilian white grape variety with a brilliant light straw yellow colour, and whose aromatic bouquet is characterised by fruity, citrus aromas and floral hints of wildflowers and orange blossom.

Vinified by pressing and separating the skins from the must, fermenting with selected yeasts for 7 days in contact with the lees, maturation in steel tanks for 9 months and refinement for 2 months in the bottle at a controlled temperature.
Direct and punchy, in keeping with this varietal’s typical characteristics. The white plum is well expressed, along with herbaceous and yellow hay notes.
On the palate the wine is full and well-structured. There is a slight hint of acidity and a well-developed flavour. Perfect with salt fish dishes.
