PASSION AND TRADITION

Antiche Cantine Rosso, the brand that represents Zottopera's wine production.

The company’s ancient cellars, dating back to the 1800s, testify to a tradition that is firmly linked to the past – a past which, in the case of wine, we wanted to bring back to life almost a century later, with the planting of about two hectares of vineyards. An ambitious project to recover the ancient family winemaking tradition.

THE VINEYARDS

Choosing the field

Having established the most suitable habitat for the cultivation of our vines, we planted a black grape vineyard at the Zottopera estate, opting for espalier training and grafting in the field for the Frappato di Vittoria, Nero d’Avola and Syrah varieties.

For the white grape varieties, Grillo and Fiano, we instead chose the Petraro estate, at the foot of the Chiaramonte Gulfi hill, for its exposure and greater temperature range and altitude.

I personally performed the manual pruning on all the vines of our vineyards by studying and applying the Guyot pruning technique (for Frappato and Grillo) and spurred cordon technique (for Nero d'Avola and Syrah) designed by Simonit & Sirch. Marcello Rosso

Our responsible choice, with no compromises: respect for nature and the territory, to protect biodiversity. Extensive manual work involved in weeding, pruning and harvesting. No use of pesticides or chemical products. Natural fertilisation, green manure and appropriate use of seasonal agronomic practices.

OUR WINES

When the right technological and phenolic ripeness is reached, the harvested grapes are transferred to a trusted organic winery and vinified in accordance with our oenologist's instructions, to enhance the natural characteristics of each variety. This is how the organic wines Aura and Jacco were born.
